Working in close contact with suppliers and local farmers, the menus at Manicomio are created using only the freshest, seasonal and where necessary, organic produce.
By sourcing rare breed Suffolk lambs and Gloucester Old Spot pigs from
East Anglia we sustain important livestocks whilst benefiting from
the great flavours. The organic Label Anglais chicken is acclaimed
by many experts as the finest chicken produced in the UK from the
relatively local Temple Farm in Essex. In fact over 70% of our
dishes are inspired by the
Slow Food movement, which is about local
produce and regional diversity. Our other finest
ingredients include line-caught
Pollack from the
Cornish day boats, Black Gold beef and the finest
artisan mozzarella from Salerno.
